ROASTED GARLIC, PARSLEY COUNTRY MASHED POTATOES (GF + VEGAN)

What is more comforting than a big 'ol bowl of mashed potates?!

Not much, right?! EXCEPT....when there is ROASTED GARLIC & PARSLEY added to them.

I went ahead and made the recipe in a larger amount to feed more during holiday season so you do not have to adapt on your own! This recipe feeds 12-15 people (depending on serving size).

 

VEGAN + GLUTEN-FREE ROASTED GARLIC & PARSLEY COUNTRY MASHED POTATOES

5# Organic Potatoes (i did 75% Yukon gold, 25% russet)

3 Medium Heads of Organic Garlic

3/4 C. Organic Plant Milk (I used HEMP)

2 TBS. Organic, NON-GMO EVOO (I used Braggs)

1 1/8 Tsp. Pink Himalayan Sea Salt or other Sea Salt

1 TBS Black Pepper (Coarsely Ground)

1/2 Bunch Organic Parsley (cleaned & dried)

1.) Cut off the tips of the 3 heads of garlic (NOT 3 CLOVES). Wrap in foil and put in 425 degree oven until very "squishy" when squeezed (like a baked potato is supposed to feel). Approx 30 minutes. Once they are roasted thoroughly, pull out and set aside.

2.) Scrub all potatoes well. Rinse. Leave 3# of potatoes with skin on. Cut all potatoes into the same size, medium sized chunks. Set in a pot, add enough cold water to just cover all potatoes, and 1 TSP SALT for flavor while boiling. Turn on to high heat, and check occasionally, until a knife pierces through the potato easily. Turn off heat, strain all the water out of the potatoes. PUT THEM BACK INTO THE HOT POT YOU JUST USED, set on WARM BURNER (that is NOW OFF), and let potatoes "dry" out for a couple minutes. See step 4 for next potato step.

3.) While your potatoes are cooking, chop your herbs coarsely, set aside. Also, measure out your EVOO and plant milk, salt & pepper too.

4.) Either hand mash using food mill, ricer or pastry cutter. I highly recommend using a Kitchen Aid if you have one, and using the paddle attachment (the whisk gets too messy). Set on medium speed, and add all of the following ingredients - Roasted Garlic (squeeze out the garlic by hand over the bowl, it should pop out easily), Salt, Pepper, Milk & EVOO. WAIT for the parsley until you are ready to serve, then add in.
